Egg White Frittata with Swiss Chard, Basil, Shallots

6 egg whites
2 whole eggs
1 lb Swiss chard chopped
4 garlic clove- minced
1 cup chopped shallots
2 teaspoons olive oil
3 tablespoons chopped fresh basil
Salt and pepper to taste
1 large tomato- sliced

1. In a skillet over medium heat, sauté the garlic and shallots in 1 teaspoon of the oil (use a paper-towel to spread evenly).
2. Add the chard, cover and lower the heat and cook for 10 minutes.
3. Remove from heat and drain excess liquid.
4. In a large bowl, beat the eggs. Stir in the chard, basil, salt, and pepper.
5. Coat the bottom of a skillet with the remaining oil and return to medium heat.
6. When hot, pour egg mixture and arrange tomato slices on top.
7. Cover and cook until the edges are firm and the bottom is golden and beginning to brown. Turn frittata over and cook for approximately 5 more minutes until eggs are cooked.
