1 pound of English cucumbers
½ tsp. salt
1-½ cups of non-fat Greek plain yogurt
1 green onion
1 garlic glove
4 tsp. fresh dill
1) Peel, seed and slice cucumber
2) In a colander toss cucumbers with salt and let stand for 45 minutes (this
removes water from the cucumber)
3) Pat dry the cucumbers
4) Mince garlic and chop green onion
5) In a blender or food processor add cucumber, yogurt, onion and garlic.
6) Pulse until smooth.
7) Add dill and serve!
