Chicken Meatballs


1 Pound ground white meat chicken
1/2 cup fat free ricotta cheese
1 egg
1/2 cup whole wheat panko bread crumbs
1/3 cup fresh chopped basil
salt/pepper to taste
Non-fat cooking spray

1. Preheat oven 375
2. Combine ground chicken, egg, ricotta cheese, panko and basil
3. Coat medium non-stick pan with cooking spray.
4. Form 18 meatballs
5. Brown meatballs on all sides and remove from pan
6. Place meatballs on broiler pan coated with cooking spray
7. Bake for 15 minutes, or until done
